They would also paint them on set to match the background. Careful lighting helped too. My understanding is film itself, the nature of the grain, can sometimes help hide faint wires as well.

I gather the requirement to do post removal in the old days was fairly minimal. Also, you DO see wires a number of times in wire fu films if you keep an eye out for it.
